The pupusa is El Salvador's national dish: a thick corn or rice masa tortilla, stuffed and cooked on the griddle. Classic fillings are cheese, chicharrón, beans or loroco. It's served hot with curtido (pickled cabbage slaw) and red salsa, and eaten by hand.
