Sopa de Gallina India
$17.99
Sopa de Gallina India is our signature dish. A traditional Salvadoran soup slow-cooked with young hen, güisquil, corn, potato, carrot, and fresh vegetables, served steaming with white rice and warm handmade tortillas.
What makes our sopa de gallina india special
We cook the hen for hours until the broth takes on body and natural color — no bouillon cubes, no shortcuts. The hen is served in large pieces alongside güisquil, tender corn, potato, carrot, and a touch of fresh cilantro at the end. It is the recipe as it is cooked in El Salvador, with the homemade flavor that many customers tell us reminds them of their mother's or grandmother's kitchen.
The soup comes with white rice and warm handmade tortillas, which guests dip in the broth or use to wrap pieces of hen. It is filling, comforting food made to be shared.
How it is served
Each order comes with:
- A generous portion of hen with broth and vegetables
- White rice on the side
- Warm handmade tortillas
- Lime and chile on the side, so you can adjust to taste
Served every day we are open (Monday through Saturday).
When to order it
It is perfect any day of the week, but there are moments when sopa de gallina india is especially good: a cold day in Houston, a Sunday (sorry — we are closed that day), after a long week, or when someone in the family has a cold and needs real broth. People also order it when they have visitors from out of town — it is one of the dishes that best represents Salvadoran cooking.
